Macerated strawberries in balsamic

Strawberries and balsamic vinegar might sound like a strange flavour combination, but it actually works really well – trust me! This is delicious served with vanilla cream or ice cream.

Serves 4

Prep time: 15-20 minutes

Cooking time: 30 minutes

Ingredients

2 tablespoons balsamic vinegar glaze (Note)

2 tablespoons caster (superfine) sugar

500 g (1 lb 2 oz) ripe strawberries, hulled and quartered

200 ml (7 fl oz) thickened (whipping) cream

1 teaspoon natural vanilla extract

8 mint leaves

Method

Whisk the balsamic vinegar glaze and sugar in a non-reactive mixing bowl. Add the strawberries and combine well, using a large spoon, then allow to stand, or macerate, in a cool place for roughly 20 minutes.

While the strawberries are macerating, put the cream and vanilla extract in the bowl of an electric mixer and whip on high until soft peaks form.

Spoon the strawberries into serving bowls and use a spoon to dollop the vanilla cream on top. Garnish with mint leaves and enjoy.

Note

Balsamic vinegar glaze or syrup can be found in gourmet food stores and some major supermarkets.
